Easy Fall Cocktails & Mocktails: Beyond Pumpkin Spice
Fall drinks don’t have to start and end with pumpkin spice.
There are so many other flavors that feel right at home once the weather starts cooling down—apple, pear, cranberry, pomegranate, grapefruit, ginger, maple, cinnamon and fresh herbs like rosemary.
And you don’t need a fully stocked bar or a complicated recipe to turn them into something worth serving.
For a fall gathering, I like starting with a simple seasonal drink that tastes good without alcohol, then offering an easy cocktail variation for anyone who wants one.
One drink. Two ways to serve it. A whole lot easier when you’re hosting.
Apple Ginger Fizz
Apple cider and ginger are an easy fall combination, and the bubbles keep this one light enough for an afternoon gathering or pumpkin decorating night.
Mocktail
For one drink, fill a glass with ice and add:
4 ounces apple cider
½ ounce fresh lime juice
2 to 3 ounces non-alcoholic ginger beer
Stir gently and garnish with a thin apple slice or cinnamon stick.
Make It a Cocktail
Add 1½ ounces bourbon or spiced rum before topping with the ginger beer.
If you prefer a lighter cocktail, start with 1 ounce.
Sparkling Pear Rosemary Fizz
Pear has a softer flavor than apple and feels a little more unexpected on a fall drink table.
Mocktail
For one drink, combine:
3 ounces pear nectar or pear juice
½ ounce fresh lemon juice
3 ounces sparkling water or club soda
Pour over ice and garnish with a small sprig of rosemary and a thin pear slice.
Give the rosemary a gentle clap between your hands before adding it to release some of its aroma.
Make It a Cocktail
Add 1½ ounces gin or vodka before adding the sparkling water.
Cranberry Orange Fizz
Cranberry and orange work from early fall straight through the holidays, which makes this one worth keeping around.
Mocktail
For one drink, combine:
3 ounces cranberry juice
2 ounces orange juice
½ ounce fresh lime juice
Pour over ice and top with 2 ounces sparkling water.
Garnish with an orange slice or a few fresh cranberries.
Make It a Cocktail
Add 1½ ounces vodka or white rum.
For a little more fizz, finish with sparkling water after adding the alcohol.
Pomegranate Lime Spritzer
Pomegranate gives you that beautiful deep fall color without needing food coloring or elaborate garnishes.
Mocktail
For one drink, combine:
3 ounces pomegranate juice
½ ounce fresh lime juice
½ ounce simple syrup or maple syrup, if needed
Pour over ice and top with 3 ounces sparkling water.
Taste before adding the sweetener. Some pomegranate juices are much sweeter than others.
Garnish with lime or a few pomegranate arils.
Make It a Cocktail
Add 1½ ounces tequila or vodka before topping with sparkling water.
Rosemary Grapefruit Fizz
If you prefer something a little less sweet, grapefruit and rosemary make a great fall combination.
Mocktail
For one drink, combine:
3 ounces grapefruit juice
½ ounce fresh lime juice
½ ounce rosemary simple syrup
Pour over ice and top with 2 to 3 ounces sparkling water.
Garnish with a grapefruit wedge and small rosemary sprig.
Make It a Cocktail
Add 1½ ounces tequila and you’ve got an easy fall-inspired spin on a Paloma.
Maple Apple Cider Sparkler
Maple syrup adds fall flavor without needing to bring pumpkin into the conversation at all.
Mocktail
For one drink, combine:
4 ounces apple cider
½ ounce fresh lemon juice
1 teaspoon pure maple syrup
Stir well over ice and top with 2 ounces sparkling water or ginger ale.
Garnish with an apple slice.
Make It a Cocktail
Add 1½ ounces bourbon before adding the sparkling topper.
Taste before adding more maple syrup. Apple cider is already sweet, and we’re making a drink—not maple pancakes in a glass.
Make a Simple Rosemary Syrup
If you’re making the Rosemary Grapefruit Fizz, you can make a small batch of rosemary simple syrup ahead of time.
Combine equal parts sugar and water in a small saucepan and warm gently until the sugar dissolves.
Add a few sprigs of fresh rosemary, remove from the heat and let it steep while the syrup cools.
Remove the rosemary and refrigerate the syrup in a covered container until you’re ready to use it.
You can also use it in lemonade, iced tea and other fall drinks, so it doesn’t have to become one of those refrigerator jars you’re afraid to throw away because you can’t remember why you made it.
Create One Drink Station for Cocktails & Mocktails
If you’re serving a mixed group, you don’t need two completely separate drink menus.
Start with the mocktail as the base drink.
Set out the juice, sparkling mixer, citrus, garnishes and ice together. Keep the alcohol clearly separated so adults who want a cocktail can add the suggested spirit while everyone else gets the same thoughtfully made seasonal drink without it.
This works especially well for casual gatherings because you’re not standing behind the counter making individual drinks all evening.
A small card beside the ingredients can show guests how much of each ingredient to use.
Pick One Flavor and Make It Your Signature Drink
You don’t need to serve all six of these at one party.
In fact, I wouldn’t.
Choose one seasonal combination that fits what you’re serving and make that your signature cocktail and mocktail for the gathering.
Having one drink offered two ways makes shopping easier, takes up less space and means you aren’t left with six partially used bottles of juice when everyone goes home.
For a pumpkin painting night, I particularly like the Apple Ginger Fizz or Sparkling Pear Rosemary Fizz.
For a Halloween party, cranberry, pomegranate and grapefruit give you deeper colors without requiring a drink to be neon green or have plastic eyeballs floating in it.
And for Thanksgiving or a later fall gathering, the Maple Apple Cider Sparkler fits right in.
What to Serve With Your Fall Drinks
You don’t need a full meal to turn a fall cocktail or mocktail into a gathering.
Choose your drink first, then put out one simple gathering board that works with the flavors in the glass.
Apple Ginger Fizz
Pairs nicely with a cheese board with cheddar, Gouda, crackers, sliced apples, nuts and a little honey or preserves.
Sparkling Pear Rosemary Fizz
Try a cheese and fruit board with Brie, goat cheese, pears, grapes, crackers and nuts.
Cranberry Orange Fizz
This one works well with a savory snack board with cheese, crackers, cured meats for those who eat them, olives and nuts. Add orange slices or dried cranberries to tie it together.
Pomegranate Lime Spritzer
Pair it with a fruit board filled with grapes, berries, apple and pear slices, citrus and pomegranate—or add a mild cheese and crackers to make it a little more substantial.
Rosemary Grapefruit Fizz
The brighter, slightly bitter flavor works nicely with a savory cheese board. Try goat cheese, Brie or another creamy cheese with crackers, nuts, olives and a little fruit.
Maple Apple Cider Sparkler
This is the one I’d bring out with a fall dessert board—apple slices, cookies, mini muffins, caramel treats, chocolate and other little fall sweets.
Gigi Says
Don’t feel like you need to build one enormous board with a little bit of everything.
Pick the drink. Pick the board. Let the flavors do the decorating.
A cheese board with an Apple Ginger Fizz or a dessert board with a Maple Apple Cider Sparkler can be the whole gathering.
Easy Fall Garnishes
You don’t need an elaborate garnish tray either.
Apple or pear slices, orange or grapefruit wedges, cinnamon sticks, rosemary sprigs, fresh cranberries and pomegranate arils can make a simple drink feel intentional.
Choose the garnish that already belongs with the drink rather than buying five extra ingredients simply because they look pretty in a photo.
Make a Small Batch for a Gathering
Most of these drinks can be partially prepared ahead of time.
Multiply the juice, citrus and syrup portions by the number of servings you need and combine them in a pitcher.
Keep the pitcher refrigerated.
Wait to add sparkling water, ginger beer or ginger ale until you’re ready to serve so you don’t lose the bubbles.
For cocktails, I prefer keeping the alcohol separate when you’re also serving mocktails. Guests can start with the same nonalcoholic base and adults can add the suggested spirit to their own glass.
Just make sure anything containing alcohol is clearly identified and kept where children can’t accidentally serve themselves.
Gigi Says
A good mocktail shouldn’t feel like the drink someone gets because they’re not having the “real” one.
Make the good drink first. Then decide whether it needs alcohol.
Apple and ginger. Pear and rosemary. Cranberry and orange. Pomegranate and lime.
Once you find a combination you love, tweak the sweetness, bubbles and garnish until it tastes like yours.
That’s how a simple drink becomes the one everyone remembers from your gathering.
